Weekend Recap

I really need to manage my time better since it’s now Tuesday and I’m just now getting around to recapping the weekend.

This weekend was our big Valentine’s Brunch and I think it was a huge success!  We had just under 30 people at the house and everyone seemed to enjoy themselves.  The downside to hosting?  I don’t get a chance to catch up with all of my friends!  But it is nice to see a few of these faces a few times a year and I’m glad our brunch is one of those occasions :).

Friday was full of prepping for Saturday but I did manage to squeeze in a manicure and quality time with Jessica.  Their new pup is absolutely delicious and I couldn’t get enough of her little kisses!

darlaLunch with Lee followed at a new favorite, Guru in Sugar Land.  The food is always fresh and why wouldn’t I love a place with such a cute atmosphere?  And your drink is served in a mason jar.  Love.

meganThe rest of the evening flew by as we prepped for an early Saturday morning and of course, not a single photo was taken.  So disappointed!  I whipped up some of my favorite brunch recipes, served fruit with Nutella (because you can’t have fruit without it), and had an adorable selection of Jolie Delights cookies.  Ambre creates these delicious cookies right here in Fort Bend County and they are always a hit!  I’m already planning the next party just so I can place another order.

Sunday greeted us with a perfectly gloomy day that was made for cuddling on the couch.  Hosting really takes it’s toll on Lucy; she probably slept for a good 20 hours afterward!

lucyWe finished the evening off with a modified version of Better Than Takeout Chicken Fried Rice and the Grammy’s.  I love award season and this show did not disappoint.  Favorite moment?  Mumford and Sons performances and Album of the Year win.  I could listen to these guys for days.  (runner up to my favorite moment?  JT, duh)

The One With The Jam

Remember the Friends episode where Monica makes tons of jam in order to gain control of her life {this is the same episode with the “hug and roll”…good stuff, people}?  That’s kind of what my parents’ house looked like yesterday.

“I need a plan, a plan to get over my man.  What’s the opposite of man? Jam!”

Mom had an idea to make jam and give it to wedding shower guests as their favor.  Great idea!  But…none of us had made jam before.  Google to the rescue!  I came across a blog post by Intimate Weddings that seemed straight forward and fairly simple so we went with it.

Since we’re using Mason jars for the flower arrangements at the wedding, I knew WalMart had an excellent selection of canning tools and a huge selection of jars in all different sizes.  We settled on the adorable 4 ounce quilted Ball jars and picked up a starter utensil kit since we were basically starting from scratch.

After a little math and some goofy “concentrating” faces in the middle of WalMart, I decided we needed about 14 pounds of strawberries, 18 cups of sugar, and 1 1/2 cups of lemon juice (though I think you can scale back a little depending on your taste preference).  We got home with all of the ingredients and equipment and got to work…

Rinsing, hulling, mashing, simmering, stirring, simmering, boiling, filling.  Repeat x3.

7ish hours later we had approximately 60 ounces of jam {48 – 4 ounce jars and 6 – 8 ounce jars}!  Can you tell I’m slightly excited?  After each batch I even squealed “it looks like JAM!”  I really couldn’t believe what Mom, Belle, and I did.  It was such a time consuming process and truly a labor of love.  Once we dress these little ladies, they are going to be so precious and hopefully all of the shower guests will love them!

Overall, I would definitely recommend Intimate Wedding’s tutorial but be warned that this does come out slightly thinner than Smucker’s Jam from the grocery store.  From what I’ve read, this seems to be the norm so I’m not worried.  It tastes so good and I cannot wait to slather this all over a biscuit!

High Five for Friday

I’ve been looking forward to this week for well…weeks and as always, it has flown by.  Busy busy busy: a wedding, two birthday parties, movie date, dinner with friends, another dinner with friends, Independence Day, prepping for our engagement shoot, another birthday party.  Squeeze work into that schedule and I’m ready for a vacation.

I don’t feel like I took nearly enough pictures to capture everything that we squeezed in, but this is our week at a glance. {I really should get better at that if I’m going to keep up this blogging gig}

1.  You’re all well aware that I love my EC Life Planner so any free time I had this week, was occupied by getting my new one ready to go.  Of course Lucy Eleanor had to be right in the middle of the action 🙂

2.  An afternoon at the Texas Medical Center for work reminded me how much I enjoy the hustle and bustle of it all.  Top it off with a beautiful afternoon and I was plain ol’ happy.

3.  Last month I forgot to download Ashley Brooke Designs‘ iPad calendar so I made a point to get to it this week.  Aren’t her designs adorable!

4. This year’s 4th of July was low key for me.  I spent the morning at my parents house for a classic {i.e. loud}, family breakfast and planned an impromptu ‘semi-homemade’ dinner.  Can you go wrong with crock pot pulled pork and strawberry shortcake?  I didn’t think so.

5.  How can I be such an avid planner yet procrastinate just as much?  We’ve had our engagement shoot planned for weeks and I had one particular photo that I want to re-create.  Of course, I couldn’t find the perfect confetti so I took on the challenge of making some.  This mess is hard work but with Felicity at my side, I’m positive the results are going to be amazing!  With this lovely lady behind the camera, I don’t have anything other than the 90+ degree weather to worry about.

Girl’s Night

It’s always fun to entertain but Lee and I don’t do it nearly often enough.  When Jamie suggested that Jessica and I meet her for happy hour, I jumped at the opportunity and invited the girls over instead.

What am I supposed to feed the girls? immediately ran through my head but I didn’t have any other ideas other than my go-to antipasto plate {my attempt at fancy-ing ‘snacks’}: cheese, meat, crackers, and fruit.  I could enjoy these goodies every couple of weeks and they would be just as delicious every single time!  Easy way to feed your guests so you can focus on wine!

I happened to be browsing Pinterest {duh} Monday night and found a quick tip for home fragrance.  Pour a couple cap-fulls of vanilla extract into an oven safe dish and put it in the oven on 300 F for up to one hour.  After about 20 minutes in the hot oven, your house will smell like you’ve been baking chocolate chip cookies!  I didn’t have time to switch out my Scentsy fragrance before the girls got here so this was a fantastic substitute!

High Five for Friday

I’m linking up with From My Grey Desk for another High Five for Friday!  I love this idea because it really makes me stop and think “What did I do this week that really made me happy?”  Such a great way to get me to slow down and enjoy life a little.

1.  Last week, my manager sent me a recipe for Maker’s Mark Rice Krispie Treats because she knows how much Lee and I love our MM.  Some friends were coming over for wine and cheese Saturday evening so I decided to throw together this easy dessert {yes, I realize that the two don’t “go” together – whatev}.  These treats are so good that I had to make them again later in the week.  Just as good the second time around!

2.  The gym.  Yes, the gym.  I’m pretty obsessed with my trainer and I look forward to that butt-kicked feeling afterward.  Going to the gym makes my work week FLY by which is something that I absolutely need.

3.  In preparation for Spring and an upcoming trip to Austin, I’m updating my wardrobe just a bit.  This shirt was delivered this week and the pink is even more perfect than it appears online.  I see this being a weekend staple that some might get sick of seeing me wear :).

4.  I am so excited to spend this weekend with Lee!  The weather is going to be flawless and perfect for outdoor activities and maybe a trip to the Bayou City Art Festival.

5.  Our Save the Date’s are ready to be dropped in the mail tomorrow morning!  Because I love beautiful stationery, picking the stationery for our wedding has been a real treat.  This was the third order I’ve placed with Minted and I’m always so impressed with the customer service and quality of the paper.  I’m so excited for our guests to receive them and hoping that everyone will appreciate the pretty paper!

26 & 27

It’s a slow moving Saturday morning and that’s just how I like it.  Since I haven’t posted photos the last two days, I thought I’d multitask while catching up on American Idol’s Houston auditions.  Good grief.  So far, the first guy is not making Houston proud.

My photo from the 26th is of my new Sharpie Pens.  New office supplies thrill me and as soon as Ashley told me she was ordering some for herself, I had to follow her lead.  When Sharpie Pens first came out, they only had primary colors but these are pretty and girly.  Perfect to use in my Life Planner 🙂

After years of declaring that sushi was gross {without actually trying it}, I now crave it weekly.  My co-workers and I frequent Oishii since it’s just down the street from our current office but we’ll be moving soon so we had to get our fix this week.

This afternoon we’re headed to a birthday party at one of those bouncy house places.  You have no idea how much fun I’m going to have!
